UVAS Winery is Family-Owned and operated by The Zaldivar Family, united by a shared dream and a deep love for wine. Together, we’ve built more than just a winery; we’ve created a space rooted in care, connection, and joy. Every detail reflects the dedication we pour into this journey, and we are endlessly grateful to share it with our community in Old Town Poway.
Our story truly took shape in 2021, when Tristian, better known as “Tito”, began working under the winery’s previous owner. During that time, he learned the craft from the ground up: harvesting grapes, caring for the vines, and guiding each wine through fermentation and the aging process. Through hands on experience and a genuine passion for winemaking, Tito developed the skills and respect for the process that now define our wines.
When our family took over the winery in 2025, we honored its foundation while adding our own personal flair. We proudly began releasing our own specialty wines made by Tito, each bottle crafted with intention, creativity, and heart. At the same time, we remain passionate about collaboration. We proudly partner with talented local vineyards and winemakers in Southern California, building lasting relationships rooted in a shared love for the craft. Through these collaborations, we curate a diverse collection of handmade wines that showcase the rich character and spirit of our region.
At the core of everything we do is family. Running a small, family-owned business takes patience, trust, and a whole lot of love-and we bring that care into every part of the winery, from vine to glass. We believe wine is best when it brings people together, and our space is designed to feel both welcoming and refined—a place to unwind, connect, and enjoy the simple pleasures of good wine and good company.

Keeping it in the family
The name "Uvas," (pronounced oo-vas) holds a special meaning for our family. In Spanish, uvas translates to "grapes," a simple yet beautiful relfection of what brings us together at our winery. It also honors Tito and Ashlyn's Cuban heritage on their father's side, where family traditions and stories have always been deeply cherished. At the heart of that legacy is Ada, their grandmother, who came from Cuba 25 years ago and has been one of biggest supporters and inspirations. Her strength, love, and encouragement are woven into the spirit of UVAS Winery, making it not only a place of wine, but a celebration of family and heritage.
